Here's a popular Nepali snack, that's probably been the staple diet every college goer in Delhi University (or good old DU!), particularly in the North Campus.
For a long, long time, I was afraid to try momos, as getting that pretty crimped ghujiya like pattern looks like painstaking work. However, I discovered, it's just as good without the pattern, in the taste department, if not in looks, so like me, if that's been holding you back, give it a go!
Ingredients :
- Wheat flour – 1/2 cup
- Maida – 1/2 cup
- Salt & water – as required.
- Carrot – 2 nos (Finely chopped )
- Cabbage – 1 cup ( finely shredded / chopped )
- Big onion – 2 nos (-d0-)
- Garlic – 5-8 flakes (-do-)
- Green chilly – 1-2 nos (slit cut ) (replace with chilly sauce if u r a spice lover)
- Soya sauce – 1 tsp
- Ajinomoto – 2 pinches (optional)
- Salt – As required
- Oil – 2 tbsp
- Mix Maida , wheat flour along with salt & water to make a soft pliable dough.Keep it aside.
- Take a wide mouthed kadai with 2tbsp of oil and add the onions & garlic pieces.Saute for sometime.Then add the green chilly , followed by vegetables.
- Saute well.Cover & cook for sometime.Add salt , soya sauce and Ajinomoto (optional ).Toss it well and switch off the flame.
- Now take the dough and make small balls of even size.
- Roll it to make a thin small poori of 4-5 inches. Remove the green chilly from the stuffing before u fill.
- Then take a tsp of stuffing and keep it in the center of the poori.
- Bring all the corners together and make a twist to get the shape of momos.I hope the picture gives u the clear idea.
- Steam it in a idly pot for 10-15 mins or deep fry it !!
GARLIC CHUTNEY/MOMO SAUCE :
- 2/3 Tomatoes
- Garlic flakes – 10 nos
- Red chilly – 4 nos ( i added only 2)
- cumin seeds- 1/2 tea spoon
- Fenugreek (Methi Dana)-1/2 small tea spoon
- turmeric powder-1/2 tea spoon
- Asafoetida-hing-2 pinch
- Vinegar –1- 2 tsp( based on the no of red chillies used)
- Salt & water – as required.
- oil- 1 table spoon
- Grind all the ingredients given above with little water.(since the quantity is very less, i used little water to grind)
- Fry for 3-5 minutes in a kadai
Transfer to a serving bowl and Enjoy with Momos.
